Granola update! Holy cannoli!!

Oh cannoli how I dream of you! But not today, sugar!!

One of my biggest disappointments with the granola I make is that it’s not chunky, at all. But the other day I found a great solution!

Truvia sweet complete brown sugar substitute and LouAna coconut oil

I picked up some Truvia brown sugar substitute and used it with some coconut oil. I melted the oil in the microwave first, 1 min at medium power worked for me

Mixed in the usual suspects except this time I left out the maple syrup and used about a cup (not packed, I just eyeballed dumping it in tbh) and 2-3 tablespoons of the coconut oil.

I put in about 3 cups of oats, it was a very dry blend after mixing things up!

Baked it for the usual time n temp and was VERY loose and almost soupy when it came out. I almost pitched it! I left it there in top of the stove in disgust and walked away.

It wasn’t until I had some midnight (8pm) munchies that I remembered it and went to look. What an amazing surprise!
