Crispy apple chips

I’ve been eating the same snacks over and over and was recently gifted a bag of honey crisp apples. It was great because I’ve been craving something different but haven’t done a damn thing about it. This position forced my hand to figure out something to do with these apples!

Plus I just made a fresh batch of this granola that I can’t get enough of. Especially with some Lily’s chocolate chips!? FOH! It’s my latest crack (snack) addiction. Adding some crispy apple chips to all of that sounds uhmazing!

I don’t have an apple coring tool so all I really did was lopped off one side of the apple, being sure not to cut into the core. From there I continued around the remaining sides and then cut the chunks into slices.

If you have a mandolin, I would strongly recommend using that for thin consistent slices. If you don’t have one, you definitely want your knife sharp. I had neither =(

Once you have your sliced apples, throw them in a bowl and douse ’em with cinnamon, I added some nutmeg as well. The amount you use really depends on the amount of chips you have and how much you like cinnamon! A little bit goes a long way. I have about 4 apples worth in this bowl and used maybe a tablespoon of cinnamon? I dunno, gotta go with what you feel.

I had these things in the oven for all damn day (at least 8 hours) going back n forth. I think my oven has an issue with the low temperature setting (170F) and the door being open. Every time I checked on them the oven did not feel warm at all. I saw drippings in the pan though so I knew something was going on!

I went back and forth with the door being wedged open, to it being shut. Played with the temperatures (up to 200F) and ultimately leaving them in at that temp helped them along the way much faster (another hour or so lol – I put them in at 9am and finally called them chips around 7pm)

Some other things I want to try are adding some vanilla (bean or extract) to the mix as well as pumpkin spice, or maybe something spicy? Not in the same batch tho!
