Bacon and red cabbage quesadilla
I’m standing here eating this thing, no, devouring it, as I’m writing this. The only thing I would do differently is maybe pickle some cabbage first. Everything else tho?? Spot on! I always was impatient 😟
I used some low carb “keto approved” tortilla shells to keep it somewhat carb friendly. This shit is bangin!!
Rewind to an hour ago…
So I’m standing here with the munchies, roaming the fridge 15 times to see if anything magically shows up n my mind starts going. I mean way back to my roots.
I see the cabbage, I see the bacon – immediately *IT’s AWN LIKE DONKEY-KAWNG MY NINJAS!*
I have this vision in my head….
It’s……gonna be……AWESOME!!
And so it was!
I started frying up the bacon. I don’t even know what else is going in this yet. It really doesn’t need much!
I was initially thinking some kinda pressed BLT but then thought how disgusting the wilted lettuce would be, some soggy-ass tomatoes turning things into mush…. No thanks
I saw the cabbage n started thinking about how I used it some stuffed peppers (that I haven’t posted about yet) and thought the contrast between that and the bacon would be tremendous!
I grabbed some garlic and onion and prepped those while that bacon was cooking.
Once I got the grease out of the pan, added that delicious trifecta of cabbage, garlic and onion. Threw in some salt and pepper and just let those veggies soften for a good little while!
I don’t have a quesadilla maker so I used slapped those torts on the panini press, and piled everything on. A few minutes later and my tastebuds were in paradise!
