KISS – Simple ingredients, HUGE flavor!

Never ever did I ever anticipate actually looking forward to eating some of the things I’ve been making! Not that I’m a bad cook (I’m ok, at best!) but, seriously, who CHOOSES to eat squash for lunch!?

This hit the spot tho and really filled me up, for now.

All you need is some squash, I added some whole whatchamacallits of garlic, olive oil, rosemary, thyme and some of that pink Himalayan salt.

I definitely don’t use scales or measuring cups a whole lot, especially for something like this but for those of you that insist, here ya go…

6 squash – I’m not sure what size mine were in comparison to other squash, but I’d guess they’re on the medium side of things? I dunno, whatever. Adjust the rest of your ingredients to how you see fit.

Approx. 1/4 to 1/2 cup of olia-oolia (that’s French, phonetically, for olive oil).

Tablespoon each of thyme, rosemary and salt.

If you’re into it like I am, whole cloves of garlic

Mixed it all up, dumped it on a sheet pan and put it in the oven under the broiler (mine has a low/high option, I chose low).

Roasted all that stuff for 10 minutes, whipped it out n mixed it up a bit then back in for another 15 minutes.
